Each of the three grape varietals is picked when perfectly ripe. They are then vinified and fermented individually under controlled temperature (between 75 – 82 °F). Skin maceration follows to highlight each varietal’s specific aromatic and structural characteristics.

Maturation in barrels takes place separately for each component for the first six months before proceeding with carefully calibrated assemblage and subsequent maturation of the blend for another two years in barrels. This is followed by bottling and at least eight months of bottle-aging before being released into the market.

A deep, concentrated ruby color provides a foretaste of its rich aromas, which open up with blackberries, blueberries, and dried wildflowers with layers of toast and cinnamon. On the palate, this complexity of sensations is anchored by dense tannins, which create a silky texture that fills the mouth. A pleasing salinity and acidity give vibrancy to its taste profile, and the delightful persistence of fruit beckons one to take another sip.

Although it is a wine of complex structure, it demonstrates unique versatility when it comes to food pairing, especially with full-flavored dishes. Red meats, rich poultry, and wild game are entrees of choice, either prepared simply or more elaborately with rich, herbaceous sauces. Mature cheeses are another avenue of exploration, as are spicy dishes full of peppery heat.
