MAGGIOLO

CHIANTI CLASSICO DOCG

Maggiolo Chianti Classico D.O.C.G. is a taste of the joyful brightness of our area. The name of this delicious, rounded wine refers to a plot of the vineyards where our grapes come from. Previous to grape growing, iris flowers (Giaggiolo) were cultivated in the same spot. To this day, you can see some of them blossom during May (Maggio).

GRAPES

Sangiovese, Cabernet Sauvignon, Merlot

ALTITUDE

1378-2149 ft a.s.l.

AGING POTENTIAL

5-6 years

The grapes are destemmed, and the berries are passed through an optical sorter. After pressing, the must ferments with the skins in stainless steel tanks, where it remains until late winter. The grape varietals are vinified separately, followed by one-and-a-half years of aging in 50 and 70 hl oak casks for the Sangiovese and in barriques for the Cabernet Sauvignon and Merlot.

Expressive notes of red cherry, earth, and warm spice framed by subtle vanilla and notes of oak. It has a full body and bright acidity with round tannins.

This wine pairs marvelously with dishes that are full of spices and herbs. It is also ideal with various types of soups, especially those made from chickpeas, wild peas, or lentils, and simply seasoned with extra virgin olive oil. A superb pairing for meaty dishes from Asian and Latin cuisines as well as Italian-influenced dishes, including eggplant parmesan, thick porterhouse steaks with parmesan roasted potatoes, or even spicy sausage and gorgonzola-topped pizza.
