Pan-Seared Pork Chops w/ Italian Compound Butter


  • 4 thick-cut boneless pork chops
  • 2 tablespoons of unsalted butter
  • 1 teaspoon of the following, all dried: parsley, basil, thyme, oregano, marjoram, a pinch of garlic powder and, if you want some heat, add red pepper flakes. 
  • 2 teaspoons sea salt
  • 1 teaspoon fresh ground pepper
  • 1 tablespoon oil
  • 2 cups of your favorite seasonal vegetables


  1. Combine all the dry spices to make your Italian seasoning blend.
  2. Put a medium-sized cast iron pan over medium-high heat. Pat the pork chops dry. 
  3. Rub both sides of each chop with Italian seasoning, sea salt and freshly ground pepper. Add 2 tablespoons of the seasoning to the butter and combine with salt and pepper. Refrigerate.
  4. After brushing the pork chops with oil, cook them in a hot pan for 4-5 minutes on each side, or until a golden crust forms.
  5. Rub the remaining oil over the top of the chops, then flip them over. Sear them for 3 to 4 minutes more, then remove them from the pan and let them rest for 10 minutes. Add 1/2 of a tablespoon of the butter mixture on top.
  6. Serve with seasonal vegetables.
